Ingredients for 1 person -
100g basmati rice, Vegetables: 1 large potato, 1-2 carrots, 1 small cup green beans, 1 tomato (you can add other vegetables of your choice), vegetable oil or ghee Whole spices - 1 tsp cumin seeds, 3 cloves, 3 cardamom pods, 1 cinnamon stick, 1 bay leave, 1 big onion, cut into thin slices, 1 garlic clove, 1 small piece of fresh ginger, 1 red or green chili Powder spices-
1 tsp turmeric (curcuma) powder, 1 tsp curry powder, Salt to taste
To garnish -
Fried almonds or cashew nuts, coconut flakes and raisins, fresh coriander
Method - 1. Cook the rice and keep aside. 2. Pre-cook also the vegetables so that they become a bit soft, but not mashy. 3. Heat oil or ghee in a pan. When it is hot, put the whole spices and let them start to crackle. Then add the onions and fry until they become light brown. Add garlic, ginger and the chili and fry for another 2-3 min. 4. Now put the vegetables and the powder spices. Stir well and let it cook on low-medium flame. 5. Finally, add the rice, mix well and let simmer on low flame. 6. Fry the nuts and raisins and put them as garnishing on the top of your biryani.
